How Much Syrup Is Just Right? The Art of Balancing Sweetness

We know sweetness is subjective. Living in the south the best example I can think of is sweet tea. Some people want just a small dash of sugar while others add heaping cups. Balance however is universal. While we can’t all be Libras, looking at you Courtney, we can do better to add a bit more balance into our day. 

For us, balance in our syrups is making sure sweetness is NOT the first thing you notice. When we are out doing markets, one of the most common things we hear is,”WOW, that really tastes like ___!”  Yes, that is the balance!

Why Rich Syrups Need Different Ratios

Before you run to the bank, these syrups won’t make you rich. They are rich in sugar. That is right these bad boys have a 2:1 ratio of sugar to water. Although rich syrups contain more sugar per ounce, that means:

  • Impactful flavor
  • Less volume
  • More control
  • Better texture


Balancing With Acidity

Sweetness improves when paired with:

  • Citrus
  • Bitters
  • Coffee 

Train Your Tastebuds

Start with less syrup, then adjust. The goal isn’t to have a super sweet cup. The goal is to be rounded, creating a balanced flavor that glides on the tongue.
